If you are on a diet and still want great tasting food, let me give you a hand. This is a little dish my wife throws together during the week. The clean up is a little less because she uses the grill and it keeps the house nice and cool in the summer. Please keep in mind that I am a NON COOKER. I burn water and I have been banned from multiple kitchens including people that raised me. It's just a safety thing ;-)
Ingredients
1 tsp of olive oil or cooking spray
1 tbsp Garlic powder
1 tsp Oregano
1/2 tbsp Cumin
Salt and Pepper to taste
Shredded cheese
Lime juice
Peppers
Mushrooms
Onions
Salsa
Guacamole
Sour cream
Green leaf lettuce (we used Romaine)
Directions
Combine your spices.
Split chicken breasts horizontally (so they're cut lengthwise)
Sprinkle lime juice on both sides of each chicken breast and sprinkle seasoning on as well.
Grill the chicken for about 7 to 10 minutes until done (varies with thickness).
While the chicken is cooking, oil or spray your saute pan. Then saute your peppers, onions, and mushrooms over medium heat for about 7 to 10 minutes. Season with the same seasoning used for the chicken towards the end of your cooking time. Use the lettuce as the tortilla or substitute your favorite low carb tortilla. Garnish with Salsa, sour cream, and hot sauce. Warning! They are messy but you can dig in without a shred of guilt!!!!
This recipe makes enough for two to three people with some left-overs for lunch for one lucky, non-cooking man ;-)
